黑芝麻火腿月饼
上次的火腿月饼馅跟广式饼皮不匹配,这次换个方子再来一次。黑芝麻火腿,这其实也是改了方的,做的时候心中忐忑,没想到还挺不错的。

  • 熟糯米粉55克
  • 核桃仁10克
  • 花生10克
  • 黑芝麻55克
  • 玫瑰酱7克
  • 瓜子仁7克
  • 火腿60克
  • 全蛋液13克
  • 肥膘肉15克
  • 麦芽糖13克
  • 13克
  • 广式饼皮面团206克

Steps to make 黑芝麻火腿月饼

  • 1.准备馅料
  • 2.将果仁和火腿、肥膘切碎丁倒入大碗混合均匀
  • 3.加入蛋液、玫瑰酱、麦芽糖和水,搅拌均匀
  • 4.倒入熟糯米粉
  • 5.拌匀
  • 6.分割成18克1个的小球
  • 7.面团分割成11克/个的剂子
  • 8.将面剂按扁
  • 9.放入馅料
  • 10.像包汤圆一样包起来
  • 11.收口搓圆,逐个做好
  • 12.月饼模中撒少量面粉,摇晃均匀后倒出
  • 13.放入月饼坯
  • 14.压出花型
  • 15.摆入烤盘,放入预热200度的烤箱,烤约5分钟
  • 16.定型后取出刷蛋液,再放回烤箱,烤15分钟左右
  • 17.表面金黄,出炉
