【陕西】油泼扯面
Get这项技能已经是十几年前的事儿了,当时小姨家请的保姆刘姐是陕西人,据说刘姐还曾在陕西高层领导家做过几年保姆,自己也开过面馆,想必手艺很好。
我从刘姐那儿学来了陕西的油泼扯面和不用洗面的汉中凉皮,至今受益,还教会了不少朋友。

  • 油菜2颗

Steps to make 【陕西】油泼扯面

  • 1.面粉中加入鸡蛋,盐
  • 2.把面粉拌成絮状静置15分钟
  • 3.揉成团,继续加盖醒15分钟
  • 4.再次将面团揉匀,揉至三光:面光盆光手光。醒面15分钟
  • 5.将面团取出放在抹油后的案板上
  • 6.搓成长条
  • 7.将长条面分割成12等份
  • 8.每个面团表面都抹上油
  • 9.放在抹了油的盘子内,盖上保鲜膜静置15分钟,如果不着急吃可以放入冰箱冷藏数小时都可
  • 10.醒面时准备葱姜蒜和油菜
  • 11.取一个面块擀成长方形片,长边略微压薄,再用擀面杖在面片中间压条印
  • 12.从面片的压痕中撕开就成了扯面
  • 13.水烧开后炒熟油菜,再把扯面煮八成熟
  • 14.把面条过凉水
  • 15.分放在两个碗内
  • 16.放入葱姜蒜末,酱油,盐,醋,辣椒粉放在最上面,可以放少许芝麻
  • 17.油烧热后直接浇在辣椒粉上
  • 18.好吃的油泼扯面就酱练成哒
