油麦菜鸡蛋麦饼

Steps to make 油麦菜鸡蛋麦饼

  • 1.面粉150g、盐1g、水110g用筷子搅拌成团,盖保鲜膜饧发一个小时以上。
  • 2.油麦菜清洗干净。
  • 3.下沸水锅焯水变软。
  • 4.捞出过凉。
  • 5.撰干水分切细。
  • 6.香葱切细。
  • 7.肉末、油麦菜、香葱、蒜泥、盐、蚝油拌匀成馅。
  • 8.鸡蛋打成蛋液。
  • 9.饧发好的面团分成两份,取一份擀成中间厚四周薄的圆片,中间抹点油,放入油麦菜肉馅,左右手配合收好口。面团有点黏,操作时需沾点手粉。
  • 10.两个做好,收口朝下放置。
  • 11.擀成薄饼。
  • 12.平底不粘锅烧热,放入麦饼胚中大火烙饼。
  • 13.翻面继续烙,两面刷上油。
  • 14.翻了两次,麦饼基本上熟了。
  • 15.用筷子在饼中间挑个洞,倒入蛋液,盖盖稍焖凝固。
  • 16.取出切小块。
  • 17.皮薄馅足,肉香、蛋香、菜香,很好吃。
