“久旱逢甘霖,他乡遇故知,洞房花烛夜,金榜题名时。”被誉为人生四喜,厨师根据这一典故制作出四喜丸子,表示祝贺。四喜丸子的菜肴特点:色泽金黄,酥烂浓香,寓意深刻,喜庆吉祥。

  • 猪肉馅400克
  • 冬笋40克
  • 鸡蛋1个
  • 水发木耳30克
  • 菠菜20克
  • 马蹄40克
  • 料酒15克
  • 八角1个
  • 桂皮1块
  • 味精2克

Steps to make 四喜丸子

  • 1.备猪肉馅(肥三瘦七)。
  • 2.备马蹄、葱段、姜片、八角、大料、葱末姜末。
  • 3.木耳撕片,马蹄切粒。
  • 4.冬笋切片,菠菜切段。
  • 5.调入料酒、酱油。
  • 6.放葱姜末。
  • 7.放盐。
  • 8.放鸡蛋。
  • 9.放淀粉(2到3汤匙)。
  • 10.放马蹄粒。
  • 11.用力搅拌至上劲,备用。
  • 12.取1/4肉馅,做成大丸子。
  • 13.依次做好四个。
  • 14.净锅添油烧至7成热,放肉丸。(肉丸入锅前左右手将肉丸互倒,使其形状更好)
  • 15.正在炸制的丸子。
  • 16.炸制过程中用长竹筷勤翻动丸子,使丸子受热均匀。炸至表皮发硬、色泽金黄即可。
  • 17.依次炸好四个丸子。
  • 18.取一小碗放料酒、酱油、盐、味精。
  • 19.八角掰成小瓣,放入八角、桂皮。
  • 20.加鲜汤或清水,调成味汁。
  • 21.调好味汁均匀浇在丸子上。
  • 22.上放葱段姜片。
  • 23.入开水锅加盖中火蒸40分钟。
  • 24.将蒸好丸子的原汤滗入锅中。
  • 25.放入冬笋、木耳、菠菜。
  • 26.定好味,勾流水芡。
  • 27.浇淋在丸子上即可。
