山寨艾米果——大肚包
家乡酸水店中经常能够品尝到的美食:艾米果。艾米果看似饺子形状,艾叶带有淡淡的清香,咬下一口,又品尝到里面的酸酸馅料。我们都称这种艾米果叫大肚包,而另一种貌似手指的艾米果就叫手指条。
来了广东,我曾经在客家餐厅中吃到过艾叶所做的各种美食,不过貌似和我们家的艾叶有所不同,也不知道到哪里去购买艾叶,虽然经常会馋艾米果吃,可是只能每年回家时才有的吃。
无意中发现了一个贴子,所说的就是没有艾叶的情况下,用茼蒿代替艾叶磨酱做青团,想想也是可以用这个方法来制作艾米果。

Steps to make 山寨艾米果——大肚包

  • 1.大米50g准备好,放入干磨杯中,磨成细粉,手搓无颗粒感即可
  • 2.糯米粉200g
  • 3.茼蒿只取叶子,梗另有用处,洗净备用
  • 4.茼蒿叶加少量水,放在料理机中磨成汁
  • 5.茼蒿汁煮开,味道更加的香浓
  • 6.糯米粉和大米粉拌均茼蒿汁一边倒入粉中,一边用筷子拌均
  • 7.搅拌好的叶子面团
  • 8.从老家带来的酸菜,也可用自制酸菜,也可加适量的肉,根据不同的口味入馅手上抹少许油,将面团捏成饺子皮状,放入酸菜,尽量的多放些材料,这样才能做出“大肚”之包。
  • 9.捏好的艾米果放入蒸笼中,里面放好笼布,底下放竹叶等叶子也可上锅蒸15分钟
