非常喜欢的葡式蛋挞,之前去澳门吃过一次很有名的马烈嘉蛋挞,味道果然不错,这个配方算是试过几次比较好吃的了,虽然比不上澳门的葡挞,可味道比外面的蛋糕店的好太多了,不妨一试,

  • 千层酥皮100g
  • 蛋黄17g(大致就是一个蛋黄)
  • 牛奶35g
  • 炼奶10g
  • 糖粉18g
  • 淡奶油45g
  • 奶粉4g
  • 低筋面粉3g

Steps to make 葡式蛋挞

  • 1.千层酥皮卷成卷,切成1cm左右厚的小剂子,
  • 2.用手指沿着蛋挞模具按压,
  • 3.底部一定要薄,只要没破,尽量薄,
  • 4.全部做好,这是6个蛋挞的量,
  • 5.把所有配料混合起来,面粉一定要过筛,不然会结块,
  • 6.搅拌均匀,过两遍筛,这样做出来的更细腻,倒入蛋挞皮内,6分满即可,上层220℃,下层210℃,25min左右即可,
  • 7.层次分明,软滑香甜,味道很赞!
