油炸青团(艾草糍粑)

Steps to make 油炸青团(艾草糍粑)

  • 1.清明前艾草正是长得嫩的时候。
  • 2.一根一根的摘,当然不会像买来的那样脏,采回来清洗干净。
  • 3.放开水锅中,加3克食用碱。
  • 4.焯水也可以,最好是煮至艾草梗子用手一捏就能捏烂。
  • 5.捞出投凉。
  • 6.稍微挤下水放料理机中打成泥。
  • 7.将艾草泥放糯米粉中加白糖混合,揉成团,如果太干就加适量清水。
  • 8.可以在粉团中加一匙食用油一起揉,做出来更柔韧光滑。
  • 9.揉成光滑的粉团。
  • 10.取大概20克左右粉团搓圆。
  • 11.将粉团放炸粉中裹上一层薄薄的炸粉。
  • 12.鸡蛋打散打匀,将粉团放蛋液里面蘸一层蛋液。
  • 13.放面包糠中,一边粘一层面包糠,一边轻轻按压粉团。
  • 14.将粉团均匀裹上面包糠,上图用的是五角星的面包糠。
  • 15.这是黄色面包糠的,裹好面包糠后稍微将面包糠压成饼状。
  • 16.锅中放少许食用油烧至七八热,放入裹好面包糠的粉团小火炸。
  • 17.炸至艾草糕开始鼓起来基本上就炸好了。
  • 18.沥干油份装盘即可。这是五角星面包糠成品。
  • 19.这个是黄色面包糠成品。
  • 20.本来想拍张拉开的效果,一个人不好操作,请母亲大人拍,结果拍糊了。
  • 21.炸的艾草青团比蒸的更好吃!香香的,外酥里糯,一定要趁热食用哟!冷了就没有那么酥脆了,不过冷的就有嚼劲。
