【北京】冰糖葫芦
冰糖葫芦,是冬天北方孩子们最爱的小零食。不管是在大街上,还是商店里,那一串串的晶莹剔透的小模样,着实惹人喜爱。正如那首著名的“冰糖葫芦“歌里所唱的, “酸里面透着甜,甜里面透着酸,把幸福和团圆连成串。”
这山楂串成串,形似葫芦。葫芦在中国的文化中有富余、富足、财富一说。用竹签串起来,举着就能吃,还省去了洗手洗盘的程序。边走边吃,也真是馋人了!
冰糖葫芦大多是9个、10个一串,寓意“天长地久”、“十全十美”。庙会上偶尔也能见到20几个、甚至更多山楂一串的,那也要用特殊的竹签来串。
所谓冰糖,其实不见一粒冰糖。因为糖浆凝固之后,透明的样子很像冰,故名“冰糖葫芦”。

Steps to make 【北京】冰糖葫芦

  • 1.山楂洗净
  • 2.去柄,刀横切两半,一扭就能打开,将山楂籽去掉,再重新对接成一个完整的山楂样子
  • 3.用热水烫过的竹签将山楂串成串,大小可随意,根据竹签长短来调整
  • 4.烤盘上抹一点植物油,抹匀待用
  • 5.白糖和凉水入不粘炒锅中
  • 6.小火煮开,出现密集的小气泡,并且糖浆的颜色呈淡淡的琥珀色,转成微小火
  • 7.因为糖浆比较少,锅子又小,我用勺子舀着糖浆淋在山楂上
  • 8.将淋满糖浆的山楂串轻轻摔在烤盘上,晾凉后即成冰糖葫芦
  • 9.酸酸甜甜
