猪肉黄瓜馅饺子
大年初五的时候都要吃饺子,俗称破五,每年都做芹菜或者韭菜馅的,今年做点不一样的,黄瓜馅的~非常的清香可口,家人都爱吃!

  • 猪肉500g
  • 黄瓜二大根
  • 高筋面粉500g
  • 大葱一颗
  • 一块
  • 八角一个
  • 花椒十粒
  • 白糖一小捏

Steps to make 猪肉黄瓜馅饺子

  • 1.黄瓜清洗干净备用。
  • 2.八角和花椒用热水浸泡,盖好闷十分钟后晾凉备用。
  • 3.猪肉剁成肉馅,加入姜末,再加入适量精盐,蚝油,生抽,白糖,鸡精,再分次加入花椒八角水,每次少加一点点,边加边搅拌,使肉馅充分吸收水份,直至肉馅表的粘稠有弹性,我大约用了小半碗水。
  • 4.再加入葱花搅拌均匀,加入香油色玉米油搅拌均匀,使其锁住水份并煨上至少二十分钟。
  • 5.黄瓜檫成丝,加少许精盐刹出水份。
  • 6.黄瓜丝攥干拌入馅中。
  • 7.面粉中加少许精盐增加筋性,分次加入清水,和成稍硬些的面团醒面十分钟,将面团反复揉光滑下均匀面剂.擀皮。
  • 8.包成饺子。
  • 9.锅中水开后下入饺子,煮到饺子漂浮起来就好了。
  • 10.清香不油腻,美味可口!
