轻乳酪蛋糕是我们家上座率最高的蛋糕。香浓的乳酪味,好吃的不是一点点,真是根本停不下来。这款蛋糕的配方来自网上,据说原作者是爱厨。非常感谢分享这么好的配方。原方是8寸圆模的量,我在这里按比例换算成一个三能椭圆形轻乳酪蛋糕模的量。

  • 奶油奶酪138g
  • 淡奶油20g
  • 鲜牛奶40g
  • 黄油32g
  • 蛋黄55g
  • 玉米淀粉10g
  • 鲜牛奶20g
  • 蛋白60g
  • 绵白糖30g
  • 玉米淀粉4g
  • 白醋几滴

Steps to make 轻乳酪蛋糕

  • 1.将A材料中的奶油奶酪、淡奶油、鲜牛奶及黄油加入容器内。
  • 2.在隔水加热的同时不断搅拌。尽量把奶油奶酪的颗粒化开,拌匀后的奶酪糊呈比较细腻的膏状。
  • 3.将B中的材料混匀后加入奶酪糊中,拌匀。
  • 4.将A中的蛋黄打散,加入奶酪糊中,拌匀。
  • 5.C中的蛋清加入无油无水的容器,滴几滴白醋,以电动打蛋器打发,期间分三次加入绵白糖,最后加入淀粉,将蛋清打发至抬起打蛋器后,在打蛋头上可以看到略微下垂的弯钩即可。
  • 6.取1/3打发的蛋清,加入蛋黄液中,切拌均匀。
  • 7.将拌匀后的蛋糕糊加入剩余的2/3蛋清中,切拌均匀。
  • 8.将拌好的蛋糕糊加入模具中。
  • 9.烤箱180度预热后,将模具放入盛满凉水的烤盘(受烤盘高度限制,水线高度抵模具的1/2处),插入底层,先180度烤30分钟,然后转150度烤40分钟。
  • 10.出炉后,晾至不烫手且蛋糕边缘与模具內缘分离后,脱模。彻底晾凉或冰箱隔夜冷藏后即可食用。
