珍珠丸子

Steps to make 珍珠丸子

  • 1.糯米洗净,浸泡在清水中3小时,充分泡发
  • 2.泡发的糯米沥干水待用
  • 3.五花肉去皮,将生姜切成姜碎,与五花肉混合在一起手打成肉馅
  • 4.在肉馅中加入蛋清、蒸鱼豉油、盐、鸡精、绍酒,搅拌均匀,逐次加入适量高汤,顺时针搅拌,搅打上劲儿
  • 5.将上劲儿的肉馅搓成大小适中的肉丸
  • 6.将肉丸在糯米上打滚,使肉丸表面沾上适量糯米
  • 7.将肉丸在手心中团一下,使沾在肉丸表面的糯米向肉丸内部压实,放入上汽的蒸锅中,蒸20分钟
  • 8.关火,将珍珠丸子焖在锅内,虚蒸2分钟即可
