浓香入味的五花肉炖干笋尖
立秋之后,天气果然凉快了很多,胃口也跟着“活跃”起来了。赶紧着,把炖肉安排上!

现在肚里的油水大了,所以吃纯粹的炖肉就没有以前那么香了,但是不吃又馋。所以,借着肉味加一些配菜就很好。比如今天这锅有点儿费时间但制作简单又浓香入味的五花肉炖干笋尖,简直不要太好吃!

  • 八角2颗
  • 花椒1撮
  • 1块
  • 大蒜1头
  • 干红辣椒1个
  • 香叶3片
  • 热水1锅

Steps to make 浓香入味的五花肉炖干笋尖

  • 1.干笋尖倒大盆里。
  • 2.用足量凉水浸泡10小时左右,中途换水3-4次。
  • 3.这是泡发好的干笋尖,比干笋时肥厚有弹性,涨发了2-3倍大。
  • 4.取一盘水发干笋尖,带皮五花肉约800克。
  • 5.五花肉清洗干净,切成2公分厚的肉块。
  • 6.家常调料准备好,见材料列表。
  • 7.凉锅凉油,肉块和干调料全部倒锅中;五花肉的油脂很丰富,所以少放油,起到不粘锅底的效果即可。
  • 8.不停翻炒,随着温度不断上升,肉块逐渐变色,体积略缩小。
  • 9.倒入30克左右的料酒,继续翻炒,肉块中的一些油脂也渗透出来了。
  • 10.倒适量酱油,不同品牌的酱油咸度和颜色不同,酌情加入,翻炒使肉块均匀上色。
  • 11.加足够量的热水。
  • 12.把水发干笋尖铺在肉块上面,不要翻动。
  • 13.盖上盖子,微火加热;干笋尖不易熟,中途需再加热水1-2次,盐临近快出锅时酌情加入。
  • 14.这是炖好的五花肉干笋尖,大部分肥肉都已融化,油脂被笋尖吸收,汤汁可得留一些噢。
  • 15.装盘,撒少许香葱末增色添香。
