绍式红烧鸡翅根
绍兴菜是富有江南地区汉族水乡文化的风味名菜。是汉族饮食文化的重要组成部分。绍兴菜以淡水鱼虾河鲜及家禽、豆类为烹调主料,注重香酥绵糯、原汤原汁、轻油忌辣、汁味浓重,而且常用鲜料配以腌腊食品同蒸同炖,配上绍兴黄酒,醇香甘甜,回味无穷。
时代的变迁,绍兴人口味也有所改变,特别是年轻人,接受着各式菜肴也喜欢菜肴中加几个红辣椒增加辣味刺激着味蕾。我家也是,连婆婆也接受了辣椒,也知道酸菜鱼一定要辣也够味。
但不变的是腌、腊、红烧……
鸡翅一直是儿子的最爱,各种吃法变着花样的做给他吃,浓油赤酱的红烧也确实是很好的选择。

  • 鸡翅根400克
  • 白糖10克
  • 生姜8片
  • 食用油30ML
  • 桂皮1小片
  • 干红辣椒3个
  • 母子酱油20ML
  • 香叶2片
  • 蒜肉2瓣
  • 八角1个
  • 黄酒25ML
  • 白醋10ML

Steps to make 绍式红烧鸡翅根

  • 1.翅根洗净,沥干水份
  • 2.冷水下锅,放入鸡翅,生姜3片,白醋10ML,料酒5ML,焯水,大火烧开再煮2分钟,取出翅根用温水洗净
  • 3. 热锅放入食用油,马上放入生姜、蒜肉、再放红辣椒,辣椒不要炒糊了
  • 4.放入翅根翻炒2分钟左右
  • 5.加入黄酒、白糖、全部香料、母子酱油煮1分钟左右色鸡翅上色
  • 6. 再加入约100ML左右的开水大火煮开转小火加锅盖焖煮约20分钟,中间用锅铲翻炒几次防止粘锅(必须是开水)
  • 7. 大火收汁
  • 8. 出锅了
