八带鱼当地做法通常为葱拌八带、白灼八带蘸辣根、高压八带、酱焖八带等做法。酱爆八带是个人最喜欢的吃法,这种做法,最好用短蛸八带做,这种短蛸八带个头稍小一些,但肉质非常鲜嫩,简单焯烫后,直接用辣酱爆炒,成品的味道非常鲜美,外面酱爆包裹,咬下去海鲜的鲜味又充斥着整个味蕾,让你回味无穷。

  • 1.主料:八带鱼500克副料:葱、姜、蒜、香菜、干红辣椒调料:蒜蓉辣酱、盐、生抽、糖、料酒
  • 2.八带鱼过水洗净、锅中做水,水中加少许盐、料酒去腥,水滚开后将洗净的八带鱼迅速入锅焯烫30炒,迅速捞出过水冲凉
  • 3.锅中做油,油温7成热时将佐料入锅炒制、佐料炒香后将蒜蓉辣酱入锅炒制
  • 4.辣酱炒出香味时,将焯烫好的八带鱼迅速入锅爆炒
  • 5.爆炒过程要用大火,将蒜蓉辣酱将八带鱼全部包裹住后;加入适量的生抽、糖、盐、料酒调味
  • 6.掂炒制2分钟左右出锅前将香菜梗撒入菜中即可出锅食用
