Steps to make 腊肉蒸雪里蕻

  • 1.无盐雪里蕻干菜和腊肉准备好。
  • 2.雪里蕻干菜用凉水淘洗几遍,去掉叶间的尘土,再用凉水浸泡至枝叶舒展。
  • 3.腊肉带皮切薄片,小葱切末,大蒜切片。
  • 4.泡好的雪里蕻干菜淘洗2遍,攥干。
  • 5.切寸段,和大部分葱末、蒜片、2颗八角碎瓣、生抽拌匀,装入大碗中。
  • 6.铺满一层腊肉。
  • 7.再铺一层,干菜很吃油,这样摆盘除了好看,还能将肉片中的油脂蒸出并渗透进干菜中。
  • 8.入蒸锅,大火上汽后转中火,蒸40分钟出锅,撒少许葱末增色添香。
