Steps to make Fish flavored minced meat and eggplant in a pot
- 1. After washing the eggplant, cut it into strips and put it in a basin. Sprinkle salt and marinate to remove water.
- 2. Add minced meat with soy sauce and starch, stir well and marinate for 10 minutes.
- 3. Squeeze out the water from the eggplant to remove the green and astringent taste.
- 4. Prepare chopped scallions, millet and pepper circles, garlic, and Pixian Douban sauce.
- 5. Heat the oil in the wok and slowly fry the eggplants until soft.
- 6. Fry until golden brown on both sides and set aside.
- 7. Heat oil in another pot and add minced meat to stir fry.
- 8. Add chopped scallions, garlic, and millet peppercorns and stir fry until fragrant. Pour in chopped Pixian Douban Sauce and stir fry until red oil is produced.
- 9. Pour in eggplants and stir fry.
- 10. Pour in the prepared sauce (soy sauce, oyster sauce, vinegar, and starch mixed with water).
- 11. Transfer the ingredients to a clay pot and simmer for 5 minutes.
- Sprinkle scallions before turning off the fire.
