Steps to make 红丝绒奶油夹心蛋糕

  • 1.准备好红丝绒蛋糕的材料,做蛋糕所需的糖为50克;低筋面粉和适量泡打粉以及红曲粉放入筛
  • 2.分离蛋清蛋白,取10克白砂糖加入到蛋黄的盆中,用手动打蛋器打至糖溶化
  • 3.加入油和牛奶,并充分搅拌成油水混合状
  • 4.筛子里的粉类两次过筛,然后加入到蛋黄液中
  • 5.充分拌匀成蛋黄糊
  • 6.蛋白加5滴柠檬汁用电动打蛋器打蛋白,边打边分三次加入40克白砂糖,打至发泡状,提起打蛋器有坚挺的角
  • 7.用橡皮刮刀挖一勺蛋白霜至蛋黄糊中,并充分翻拌均匀
  • 8.把翻拌好的蛋糕糊倒入到剩下的蛋白霜中,翻拌均匀
  • 9.烤盘铺油纸,把蛋糕糊倒入,并轻震几下去除大气泡;入烤箱中层,上下火160度烤20分钟,我这个是30*27的烤盘,烤盘大小不一,蛋糕糊厚度不一,时间上就需要调整
  • 10.烤好后撕去四周油纸晾几分钟后倒扣放凉待用
  • 11.180克奶油加18克细砂糖隔冰水用电动打蛋器打至奶油有明显纹路不流动
  • 12.彻底放凉后的蛋糕切片,放入容器中,一片蛋糕片加一层奶油
  • 13.装好后,用保鲜膜封好入冰箱冷藏3-4小时
  • 14.取出蛋糕对四周进行裁切修整,即可切块食用
  • 15.剩余的蛋糕片不浪费也可以直接做成夹心蛋糕,用爱心模具就做成爱心夹心蛋糕了
