香蕉巧克力小蛋糕

  • 蛋黄1只
  • 低筋面粉90g
  • 糖粉30g

Steps to make 香蕉巧克力小蛋糕

  • 1.香蕉用叉子压碎,加入炼奶搅拌均匀。成香蕉糊。
  • 2.无盐黄油切小块,室温软化(千万别隔水加热融化成液体状)。加入糖粉,先用橡皮刮刀搅拌,然后用电动打蛋器搅拌打发,使体积膨胀。
  • 3.香蕉糊加入蛋黄,用电动打蛋器搅拌均匀成糊状。分多次加入黄油糊中。
  • 4.低筋面粉、小苏打粉、无糖可可粉混合过筛。用橡皮刮刀,以不规则方式搅拌(防止面糊起筋)。
  • 5.搅拌的过程中会发现面糊太干,小量分多次加入牛奶,直到成黏稠状(看不见干粉,摸起来面糊有弹性,不是液体状)。这个时候可以试试面糊的味道,不够甜的话加点糖粉或者炼奶(主要是我忘了当时的糖粉份量......怕错所以往少的写)。
  • 6.模具刷上油(玉米油或者色拉油),撒上少量面粉,倒掉多余的粉。这样做方便脱膜。面糊装进裱花袋,垂直,挤进面糊。(这样比直接用橡皮刮刀好,方便把空气挤出来)
  • 7.用干净的手指沾点玉米油或色拉油,摁平整,再撒点耐高温巧克力作装饰。
  • 8.烤箱180度预热10分钟,然后180度烤25到30分钟,出炉的时候用小牙签戳进去看有没有液体粘着,没有粘的话代表熟了。
