烘焙新手易上手的巧克力分蛋海绵蛋糕
今天好朋友带宝贝过来玩,土宝早就想好要吃这款巧克力蛋糕了,早晨起来用了40分钟做好。两个小宝贝每人一块,边吃边不停地说:真好吃啊!太好吃啦!(配方来自君之老师)

  • 细砂糖50克+30克
  • 可可粉20克
  • 黄油30克

Steps to make 烘焙新手易上手的巧克力分蛋海绵蛋糕

  • 1.准备原材料。将蛋白与蛋黄分开,盛蛋白的碗要干净且无水无油。黄油隔水加热至融化状态。
  • 2.可可粉和面粉混合后过筛备用。
  • 3.用打蛋器将蛋白打发。打发的时候分3次加入50克细砂糖。打发至湿性发泡状态(提起打蛋器,蛋白拉出弯曲的尖角)。
  • 4.盛三分之一的蛋白到蛋黄糊里,用橡皮刮刀从底部往上翻拌的方式搅匀。
  • 5.拌匀后,倒入蛋白碗里。
  • 6.继续翻拌搅匀,成为如图所示浓稠状态。(此步很重要,如果蛋白在翻拌过程中消泡了,混合物就变得很稀,烤出的蛋糕不会蓬松)。
  • 7.倒入过筛后的粉类。
  • 8.用橡皮刮刀继续以翻拌的形式,快速地翻拌面糊,直到形成均匀的蛋糕面糊。
  • 9.倒入蛋糕模内。
  • 10.放入预热好175度的烤箱,18分钟左右直到完全彭起。
  • 11.切块。
