  • 细砂糖60克
  • 柠檬汁少许

Steps to make 巧克力戚风蛋糕

  • 1.蛋清、蛋黄分开;
  • 2.细砂糖加入蛋黄中;搅打均匀;
  • 3.加入玉米油,继续搅打至乳化;
  • 4.加入牛奶,搅匀;
  • 5.低粉与可可粉混合均匀,筛入蛋黄中;
  • 6.蛋黄糊搅拌均匀;
  • 7.蛋清先打出一些泡沫,
  • 8.分三次加入细砂糖及柠檬汁,搅打至图中的小尖角;
  • 9.取1/3的蛋白霜至蛋黄糊中,翻拌均匀;
  • 10.蛋白霜分三次加入蛋黄糊中;
  • 11.搅匀的面糊感觉有光泽,
  • 12.倒入模具中;
  • 13.打蛋白霜时,先预热烤箱,面糊拌好,在台面上颠颠,直接放烤箱;入150-160的烤箱,中下层,50-55分钟;
  • 14.到时取出,倒扣在网架上,脱模非常容易。
