黑椒牛排

  • 果酒4勺
  • 蚝油1勺
  • 生抽2勺
  • 李锦记黑胡椒汁2勺

Steps to make 黑椒牛排

  • 1.牛肉一斤,店家给切成了3片。
  • 2.牛肉洗净,控干水分,用松肉锤捶打一遍,破坏肌纤维,让牛肉口感更细嫩。
  • 3.小碗里加入果酒(可以用葡萄酒,我用的自家酿的樱桃果酒),黑胡椒粉、生抽、蚝油,搅拌均匀。
  • 4.把牛肉放入容器里,倒入腌肉汁,反复抓拌均匀。
  • 5.再加入适量植物油拌匀。
  • 6.把拌匀的牛肉平铺在保鲜盒里,入冰箱冷藏过夜。
  • 7.这是黑椒汁。
  • 8.取2大勺黑椒汁,加入适量清水,再加入少于淀粉,搅拌均匀备用。
  • 9.水里加少许油、盐,胡萝卜去皮切花片,和荷兰豆一起入沸水中烫熟,捞出备用。
  • 10.平底锅烧热,放入一块黄油,小火融化。
  • 11.把腌好的牛肉平铺在平底锅,中火煎。
  • 12.把一面煎好后翻面,中间不要翻面,一面大约煎2-3分钟,另一面也如此煎好。
  • 13.煎好的牛肉取出。
  • 14.另取锅,放入黄油融化。
  • 15.倒入调好的黑胡椒汁,烧至酱汁浓稠。
  • 16.把酱汁浇在牛肉上。
  • 17.加入蔬菜摆盘。
