叉烧已经做过N遍了,可感觉还是很美味,不时的回味着,话说回来,李锦记叉烧酱是挺好,可以到华人市场去买,住在白区的我,买Teriyaki 酱就方便了,Walmart,Ingles亚洲人和东方人柜都很容易找到,而且长期有货,想想,俺为什么非要在一棵树上吊S呢,其实Teriyaki 酱真的挺香的,味道也不错。

Steps to make Teriyaki 照烧叉烧

  • 1.把肉条摊开来,用冰锥或叉子扎上密密的孔好入味;
  • 2.把肉放在大碗里,放上日式照烧酱3大满勺、生抽2大勺、花椒粉1小勺、伏特加1/4杯、蜂蜜1大勺,用手搅拌均匀;
  • 3.把腌好的肉放在密实盒里后放入冰箱2-3天;
  • 4.将肉条平铺在玻璃烤盘;
  • 5.表面用锡纸包好,然后放入预热了的烤箱,450F,约30分钟;
  • 6.在肉放入烤箱后,可腾出手来调碗汁,等会用来涂肉表面的,用一碗放照烧酱2大勺、生抽1大勺和蜂蜜2大勺,搅拌均匀;
  • 7.烤肉时间到了,用夹子掀开锡纸,把肉汁倒在另一碗,把烤盘洗净,铺上刚才盖在烤盘上的锡纸,干净的那面朝下,再放上一个金属架子,如蒸菜架,把肉放在上面,表面涂上碗汁,放入烤箱,用Broil 功能的Low 档,将肉的四边烤约10分钟,其实是就为肉条上色和把表面烤得有些焦化;
  • 8.全部烤好后将肉稍冷却,等到能够用手触摸肉不太热时,把砧板洗干净,把叉烧条切成薄片,可供食用,也可以用来烤兰豆、雪豆等。
