葡萄干小餐包
早餐光喝粥是不够滴!
大厨说来点面包吧,好,那就来几个小餐包吧~~
厨房还有白芝麻和葡萄干,顺手了——

手工揉面还是比较痛苦的,所以面包机再次搬出来!

  • 黄油30g
  • 2g
  • 奶粉20g
  • 鸡蛋1个
  • 酵母3g
  • 细砂糖40g
  • 高筋面粉300g
  • 牛奶130g

Steps to make 葡萄干小餐包

  • 1.将牛奶、鸡蛋、细砂糖和盐加入面包桶内,倒入高筋面粉、奶粉,酵母挖个洞埋进去;将面包桶装入面包机内,启动面包机的和面程序和面20分钟,检查面团到扩展程度。
  • 2.加入软化的黄油,继续和面约20分钟,直至出膜;一次发酵,我是放面包机里面发酵的,约一个小时。
  • 3.取出发酵完成的面团,排气,分成8个小剂子滚圆(我随手揪的,没有称量所以不均匀),然后静置一会儿。
  • 4.利用这个空闲时间将葡萄干洗干净,开水浸泡,沥水(我的浸泡时间略长,导致成品里面吃起来有点湿);
  • 5.取一个小剂子压扁,包上葡萄干,收口向下;依次做好其它几个。
  • 6.将面团放入刷过油的烤盘内。有一个面团过大,就随手弄成椭圆的了。
  • 7.烤箱开启发酵模式,发酵至两倍大。可以在烤盘下方一碗开水,帮助加速发酵。
  • 8.发酵完成后取出(记得把装开水的碗也一并取出来),看,挺大的吧,这个时候千万小心不要碰表面哦。
  • 9.刷蛋液。
  • 10.撒上芝麻。
  • 11.烤箱预热165度,放中层烤15-20分钟,表面上色均匀即可。烤好的面包放至手温,再用保鲜袋装起即可。
  • 12.刚出炉的样子,烤箱温度不均匀,中间上色深,四周浅。
  • 13.组织不错吧,装饰一下,上成品图。
