炸萝卜丝丸子
做萝卜丝虾汤剩了半个萝卜,不吃的话就糠芯儿浪费了,用来炸丸子吃正好

Steps to make 炸萝卜丝丸子

  • 1.萝卜洗净,擦成丝
  • 2.入盐水中煮到七八成熟,捞出过冷水。过冷水可保持颜色翠绿
  • 3.挤净水份,加少许盐、面粉、蛋液和花椒粉拌匀。萝卜性凉,花椒粉性热,可中和一下,且能提香
  • 4.拌成如图的状态,看似松散,用手一团可成团
  • 5.油烧至五成热时,用手将丸子团成型,一个个放入
  • 6.先炸一遍定型,再改小火复炸一下,炸透炸熟
  • 7.捞出放在厨房纸上,吸去余油即可
