橙皮切碎,加到土司中,烤的时候就闻到了清甜的橙香味,吃到嘴里,那一股清香味,真是醉人心脾。

  • 橄榄油5克
  • 鸡蛋30克
  • 白糖40克
  • 橙皮27克

Steps to make 橙皮土司

  • 1.中种面团原料:面包粉和耐高糖酵母粉。将酵母粉与清水混合后,倒入面包粉,和成没有干粉的面团,放冰箱冷藏发酵10个小时。
  • 2.主面团原料:中种面团、面包粉、奶粉、鸡蛋、白糖、盐、橄榄油、橙子。
  • 3.将中种面团、面包粉、奶粉、鸡蛋、白糖放入面包桶,启动和面程序。
  • 4.当面团成形时,加入盐,继续和面。
  • 5.面团能拉出薄膜时,加入橄榄油,继续和面程序。
  • 6.将橙子皮剥下来,刮去里面的白膜。
  • 7.切成丁备用。
  • 8.面团揉到能拉出手套膜时,加入橙皮碎,揉均匀即可。
  • 9.取出面团,整理成圆形,放入盆中室温发酵。
  • 10.当面团膨胀至2倍大时,发酵基本完成。
  • 11.将面团从盆中取出,充分排气后均分成三份,揉成圆形,静置10分钟。
  • 12.取出一个小面团,擀开后左右折叠。
  • 13.再擀开,从上往下折叠起来,放入土司模具中。
  • 14.将三个面团都做好后,放烤箱发酵档进行发酵,当面团涨到模具的八分满时取出。烤箱预热上火190度下火170度,预热完成将模具放入烤箱中层烤制52分钟,取出晾凉即可食用。
  • 15.成品。
