香酥自不待言——简易麻辣“黄飞红”
之所以叫“简易”是因为之前做过一款相对比较麻烦版的,费时又费事。经过改良,我发现这样做味道也很好,传上来与亲们分享交流。
这款“黄飞红”在我家上桌率非常之高,因此我也经常做。主要是因为我家的那位时常会想要小喝两杯,这时候一小碟麻辣酥香的“黄飞红”就显得是那么地给力和惬意……

对于许多女生(比如像我),相信也特别喜欢这款花生米,抓一小把做零食也是非常不错的选择哦!

Steps to make 香酥自不待言——简易麻辣“黄飞红”

  • 1.花生米清洗干净,入加有适量食盐的温水中,浸泡半小时。
  • 2.用双手配合搓去花生的外衣。
  • 3.处理好所有的花生米。
  • 4.用厨房纸巾或餐巾纸吸去花生米表面的水分。
  • 5.干辣椒去籽,用剪刀剪成丝。
  • 6.锅中加油,油量要稍多一些,油微微有热气后下入花生米,小火加热。
  • 7.边加热边用漏勺搅动花生米,使之均匀受热。
  • 8.待锅中花生米碰到漏勺感觉松脆,而且色泽发黄即可捞出沥油。
  • 9.炸好所有的花生米后,将锅中的油倒出,留少量底油,待锅放凉后下入花椒和干辣椒丝重新开火。
  • 10.小火慢慢加热,并不停搅动辣椒和花椒,待锅中辣椒丝呈红亮色、锅中底油呈红油状态时下入晾至不烫手的花生米。
  • 11.加入适量食盐炒匀。
  • 12.关火,待花生米彻底晾凉后装入保鲜盒中放置1-2天再食用,味道更佳!
