豆角焖面
夏日炎炎,一盘清爽、筋道的焖面相之于臊子面、烩面、干拌面等等,更易于让大家喜爱。

  • 花椒少许

Steps to make 豆角焖面

  • 1.细面条、豆角备好。
  • 2.豆角撕去筋膜,掰成寸段,用淡盐水清洗干净,西红柿洗好,葱姜蒜小米椒改刀备用,五花肉切成薄片。
  • 3.炒锅放油烧热,放入花椒炸香捞出。
  • 4.放入五花肉片。
  • 5.待五花肉煸干水分,放入葱、姜、蒜、小米辣,炒出香味。
  • 6.放适量酱油。
  • 7.将五花肉炒至变色。
  • 8.放入豆角。
  • 9.放入西红柿翻炒均匀,加入盐、鸡精。
  • 10.再放入蚝油,翻炒均匀。
  • 11.加入开水,水不要超过菜,持平即可。
  • 12.将面条平摊在菜上面,加盖中火焖煮5分钟左右。火不能大,否则汤汁很快会完,导致面条夹生。
  • 13.打开锅盖,不要搅动,将面条翻身、抖散,使面条基本上都能沾上汤汁,再加盖焖煮。
  • 14.待面条焖熟,汤汁基本收干。要注意观察,汤汁收不干,面条粘粘糊糊,过分收汁会造成糊底。最后将面条和菜拌均匀,放置一会儿即可食用。
  • 15.成品。面条红亮筋道,清清爽爽不粘糊,口感极佳。
