    Steps to make 糖醋素里脊(糖醋杏鲍菇)

    • 1.原料:杏鲍菇调料;料酒、醋、老抽、白糖。
    • 2.杏鲍菇洗净,用手撕成筷子粗的条。切几片姜备用。
    • 3.撕成条的杏鲍菇,入沸水中焯一下,捞出控干水分。(焯杏鲍菇的水中放少许盐,给杏鲍菇入些底味)
    • 4.控干水分的杏鲍菇沾上一层干面粉,所有的依次做好。
    • 5.锅中烧热油,五成热下入沾好面粉的杏鲍菇,炸制硬挺出锅。
    • 6.锅中油温升至八九成热,下入杏鲍菇复炸,炸至金黄色出锅。
    • 7.炸好的杏鲍菇。
    • 8.清水、醋、白糖、老抽、料酒,按5:4:3:2:1调一碗汁,调好的碗汁中加入两勺生粉,调成一碗糖醋汁。
    • 9.炒锅中留底油,放入姜片爆香
    • 10.倒入炸好的杏鲍菇快速翻炒。
    • 11.倒入提前备好的糖醋汁,快速煸炒,使每一条杏鲍菇都裹上糖醋汁即可。
    • 12.不是里脊胜似里脊的糖醋杏鲍菇。
