Steps to make 香煎Bonito狐鲣

  • 1.狐鲣鱼肉质本身比较松,不用改刀。
  • 2.表面抹一层蒸鱼豉油,磨点海盐和黑胡椒用油纸盖住腌15分钟。
  • 3.锅油烧热,放入鱼肉,先放不带皮的一面,不要用锅铲,中间晃动锅子即可,让鱼自然煎香,用中大火煎90秒左右。
  • 4.然后翻面煎5分钟。鱼肉表面看起来金黄酥脆。这样煎鱼肉可以上色均匀。
  • 5.香煎鲣鱼就做好啦。
