秋冬营养滋补美食——板栗烧鸡

Steps to make 秋冬营养滋补美食——板栗烧鸡

  • 1.将板栗洗净先用刀开口,最好是十字开口,然后同冷水一起放入锅里,旺火煮5分钟,不可太久,不然腿外壳时里面的肉易碎。
  • 2.板栗同煮过的水加入适量冷水调成热水。
  • 3.趁热腿皮,即易除去,动作要快,要在水变凉之前去完,看看是不是很容易,完美的去壳。
  • 4.蒜切片,姜切片,大葱切小段,香葱切成葱花。
  • 5.将切好的鸡块放进煮开的水里进行飞水(焯水),用漏勺沥干捞出。
  • 6.热锅热油,倒入板栗炒香至金黄色,控油盛出待用。
  • 7.原锅倒入适量花生油烧热,倒入姜片、蒜片、桂皮、八角炒香。
  • 8.倒入鸡块煸炒香,至水干。
  • 9.调入适量生抽、老抽、料酒、白砂糖炒匀炒香。
  • 10.倒入过过油的板栗炒匀。
  • 11.调入适量精盐炒匀,倒入适量高汤/清汤。
  • 12.盖上锅盖,大火烧开,改中小火烧至入味,烧至熟。
  • 13.快好前打开锅盖,倒入适量水淀粉勾芡。
  • 14.起锅前撒上葱花炒匀即可关火盛盘。
