椰蓉花形小餐包
椰蓉做出的面包真是百吃不厌呢。以往我做的椰蓉都是放在面包里面,今天换了个造型,做成花状的连包,将面皮割破,这样椰蓉就呈现出来了。味道和模样都很赞!

Details of ingredients

  • 高筋面粉300克
  • 鸡蛋1个,50克
  • 酵母3.5克
  • 清水155克
  • 白糖20克
  • 1克
  • 黄油20克
  • 椰蓉100克
  • 椰蓉用蛋液50克
  • 椰蓉用黄油50克
  • 椰蓉用白糖40克

Steps to make 椰蓉花形小餐包

  • 1.除黄油外的所有材料入面包桶内
  • 2.用“和面”程序,将面团揉光滑后,加入软化的黄油,继续让面包机帮助揉面
  • 3.将面揉成能拉出大薄膜状即可
  • 4.将面团揉圆,入桶中进行基础发酵
  • 5.当面团发至2.5倍大时,用手指蘸面粉,在面团顶部中间戳洞,不回缩不塌陷,表示发酵成功
  • 6.面团取出,置于案上,排气,用电子秤分成9等份,分别滚圆,盖保鲜膜,松弛10分钟
  • 7.面团松弛时可制作椰蓉,也可提前将椰蓉馅做好:椰蓉100克,融化的黄油液50克,鸡蛋液50克,白糖40克,混合均匀
  • 8.取一个小面团,擀成长条状,上面均匀地铺上椰蓉馅
  • 9.由下向上卷成卷,接口处捏紧
  • 10.随意地盘成一朵花,然后用利刀在表皮上划出刀口,将内层的椰蓉馅露出,然后放入烤盘中
  • 11.依次将其它小面团完成,码入烤盘中,盖上保鲜膜,进行二次发酵
  • 12.待面团是原来的二倍时,面皮表面刷一层全蛋液,开始预热烤箱,190度
  • 13.将烤盘入预热好的烤盘中,190度25分钟左右,如果表面颜色过深,可迅速打开箱门,盖上一层锡纸
  • 14.出炉后,可放到温热时脱模
  • 15.一朵朵椰蓉花,挺招人喜欢的
  • 16.可随意掰下一块,当主食或者下午茶都不错
  • 17.馅料很足,很香
