Steps to make 香脆鲷鱼排佐日式沙拉

  • 1.先准备沙拉,我用的是盐水煮过后又速冻的毛豆,所以只需将其在热水中浸泡3分钟
  • 2.沙拉菜洗净淋干,毛豆去壳,沙拉的用料就基本准备好了
  • 3.白鲷鱼洗净,用厨房纸吸干其表面的水分。将其表皮如图处理下,均匀的撒上盐和百里香
  • 4.橄榄油入锅中火加热, 将鱼排以鱼皮向下的方式入锅, 并用手轻压一会鱼肉使其表皮平整受热均匀。 撒上盐和胡椒调味
  • 5.注意观察鱼排侧面的颜色变化,熟的鱼肉颜色较浅,当浅色上升到整个侧面的2/3时可将鱼排翻面,继续煎制2分钟,将其盛出。注意不要过久的煎制鱼排,那样的鱼肉会失水过多,吃起来很干
  • 6.将沙拉叶和毛豆摆盘,淋上日式芝麻酱
  • 7.再摆上鱼排,趁热享用
