水晶紫薯汤圆
前不久看了朋友发朋友圈在吃某码头的水晶汤圆,看着就特别漂亮,然后就蠢蠢欲动的想动手了,问题是怎么做呢?差了网上没找着做法,然后特意跑超市去看包装袋的配料表,有写到的是皮里加了藕粉,不过加得量好像是很少的,还有个糯玉米淀粉,藕粉买得到,糯玉米淀粉我就不知道哪买了,一开始用了糯米粉加藕粉试着做皮,但是始终是不透明,然后又用了木薯粉加藕粉,透明了但感觉颜色比较深,最后还是决定用了澄粉,颜色比较洁白,加了藕粉会略显透明,再用薄薄的皮包裹大馅,水晶汤圆就做出来了,遗憾的是最近超市里买的都是这种淡色的花心紫薯,没有那种深深的紫色,所以成品颜色还是差了点,以后再改进

Steps to make 水晶紫薯汤圆

  • 1.先在做紫薯馅,原料如图
  • 2.把紫薯洗干净后上锅蒸熟,大约20-30分钟,有高压锅的可以用高压锅蒸熟节约时间
  • 3.紫薯蒸熟后顺便把黄油坐在热水上隔热融化
  • 4.紫薯剥皮,切小块和黄油糖一起进破壁料理机打至细腻
  • 5.倒出紫薯馅进冰箱冷藏或者冷冻,但是不要冻结冰了,只要冻至稍微变硬身点就可以了
  • 6.汤圆皮材料如图,澄粉即小麦淀粉100克,藕粉50克,另需要开水适量,是刚烧开的水
  • 7.把藕粉和澄粉搅拌均匀,烧一锅开水,然后一边用筷子搅拌面粉,一边倒入开水,搅至面粉呈絮状,无干粉,停止加水,盖盖焖5分钟
  • 8.然后再用手揉成比较软的面团
  • 9.把紫薯馅拿出来,分成数小份,搓圆
  • 10.取一小份面团,按成中间薄边缘后的小窝窝
  • 11.放上一个紫薯馅,
  • 12.把皮慢慢往上推,最后收口
  • 13.包好的汤圆
  • 14.锅烧水,水开后下汤圆,再加适量的糖
  • 15.煮至汤圆都飘起来就可以了
  • 16.第二天早上煮给老头吃,不过煮的少,老头子喜欢吃说不够吃,然后想起了我之前做的紫晶虾饺,不过早吃完咯
