烫面戚风蛋糕
从一开始做学做戚风蛋糕起,棉花蛋糕和烫面戚风一直在心里长草,只是因为时间等其它原因一直没能完成,趁着过年有空闲的时间先把烫面给做一回,棉花蛋糕没太大的把握。相比普通的戚风,烫面戚风用的热油把面烫热再加入蛋黄,再用水浴法烤制。口感更为细腻!柔软!

  • 低筋面粉35克
  • 炼乳35克
  • 白糖20克
  • 鸡蛋3个
  • 玉米油20克

Steps to make 烫面戚风蛋糕

  • 1.锅内放入玉米油烧热关火。
  • 2.放入低筋面低搅匀成烫面备用。
  • 3.两个蛋黄和一个全蛋打入碗中。
  • 4.两个蛋清另放入一个碗中。
  • 5.蛋黄用打蛋器搅打均匀倒入烫面糊中。
  • 6.再加入炼乳搅匀。
  • 7.低速打发鸡蛋清,在粗泡沫状态加入三分之一白砂糖。(白糖分三次加入)
  • 8.当打发至硬性发泡,提起打蛋器时盆中的蛋白霜形成小尖角时即可。
  • 9.取三分之一蛋白膏,放进蛋黄糊里,用切拌的手法混合均匀。
  • 10.再将蛋黄糊倒回蛋白膏里,用切拌手法混合均匀。切忌,不能画圈圈!
  • 11.拌好的面糊倒入模具中。(我用了一个4寸的模和一个耐热玻璃碗)
  • 12.烤箱提前170度预热,烤盘放入适量热水放入烤箱底层,烤网放入倒数第二层。
  • 13.上下火160度烤50分钟,最后调170度烤10分钟即可。
  • 14.烤好后取出倒扣晾凉。
