  • 大蒜叶2瓣
  • 精盐1小勺
  • 生粉1大勺
  • 精盐1小勺
  • 米酒1大勺
  • XO酱1/2大勺
  • 酱油膏1大勺
  • 生抽2大勺
  • 精盐1/4小勺
  • 冰糖约1大拇指量
  • 胡椒粉1/2小勺
  • 米酒2大勺

Steps to make 鸡翅海鲜煲

  • 1.先把火腿煮出味,水不要太多,半碗即够,留待陶瓷锅焖烧时用。
  • 2.用一容器,放章鱼圈和须,加精盐1小勺,放水与材料齐平,搅拌几下,浸泡约20分钟。
  • 3.章鱼时间到后捞起沥水,用厨房纸吸干水,加入生粉1大勺,抓匀,让章鱼焯水时有保护层。
  • 4.置一锅,加入精盐1小勺、米酒1大勺,把水烧开,倒入章鱼约5秒,立即捞起滤水,水不倒掉。
  • 5.用刚焯章鱼的水焯鸡翅,待血水升起时约煮2分钟,也捞起沥水。
  • 6.把冬菇去蒂起花(起花可省略)、腊肠切片、蒜头、红葱头切半、生姜切片、辣椒切圈、大蒜叶切块(忘拍片)。
  • 7.砂锅放底油置炉上,升中大火,步骤六准备好的材料入锅,稍煸香。
  • 8.把全部材料拨一边,再加菜油约1大勺,加入XO酱,爆香。
  • 9.翻匀全部材料炒片刻。
  • 10.加入鸡翅。
  • 11.倒入熬好的火腿汤和泡过冬菇的水,再加XO酱1/2大勺、酱油膏1大勺、生抽2大勺、精盐1/4小勺、冰糖约1大拇指量、胡椒粉1/2小勺、米酒2大勺,拌匀,大火烧开。
  • 12.等汁收到一半时,放入粉丝,时不时翻拌,转小火,让粉丝吸汁平均。
  • 13.等汁收到1/3量时,倒入蒜叶块。
  • 14.盖上盖子焖片刻,加入章鱼,翻拌均匀(见成品图),就OK了。
