豆花鱼
豆花鱼是四川的特色菜,做这个菜用鱼片最好啦,我今天是懒省事,直接用了鱼块来做了。家庭版的菜随意性比较大,按自己口味做,好吃就行,比较考验刀工的步骤时间紧的时候就省略啦,呵呵。

Steps to make 豆花鱼

  • 1.这个菜我只用了鱼中段。鱼切2--3厘米宽的块,加辣椒、姜丝、黄酒腌制几分钟
  • 2.内酯豆腐切块
  • 3.先把鱼煎到两面定型盛出备用
  • 4.锅中留底油炒黄蒜头
  • 5.加郫县豆瓣
  • 6.炒出红油
  • 7.放入煎好的鱼
  • 8.加开水基本和鱼持平
  • 9.放入内酯豆腐
  • 10.中火煮开小火炖10分钟,中间不要翻动,轻轻晃动锅就行,以免把鱼块弄烂了.天冷容易凉,最后可以倒入砂锅再煮开后上桌,保温效果好
