水煮肉片

Steps to make 水煮肉片

  • 1.里脊肉洗净
  • 2.切薄片,加少许胡椒粉、盐抓匀
  • 3.加一个鸡蛋的蛋清,适量淀粉,抓匀
  • 4.再加点油封一下,腌制二十分钟
  • 5.金针菇和黄豆芽洗净
  • 6.焯水后捞出备用
  • 7.青花椒小火炒香
  • 8.擀成面备用
  • 9.葱花、姜片、小米椒切好,1大匙郫县豆瓣酱,1小匙花椒、1瓣大料,4个干辣椒剪成小段,水洗一下
  • 10.热锅凉油,小火炒香葱姜、花椒、大料、小米椒
  • 11.下豆瓣酱
  • 12.小火炒出红油
  • 13.加适量鸡粉
  • 14.加1大碗清水,适量盐,调大火煮开,再小火煮几分钟,充分煮出调料的味道
  • 15.捞出调料,弃掉不要
  • 16.下焯过水的金针菇和黄豆芽,煮两三分钟
  • 17.将煮好的金针菇和黄豆芽捞出,铺在碗底
  • 18.调小火,下腌好的肉片,不要动,防止肉片脱浆把汤弄浑浊
  • 19.煮至肉片变色即可,不要煮久了,时间长了肉片就不嫩了
  • 20.连汤带肉倒入碗里
  • 21.撒上青花椒面、辣椒面、葱花
  • 22.炒锅重新烧热,冷油下干辣椒段,小火炸香
  • 23.炸好的干辣椒取出放在碗中
  • 24.调大火,把油烧至冒青烟
  • 25.趁热浇在调料上
  • 26.再加点香菜装饰一下即可
