Steps to make 鱼羊合鲜

  • 1.准备材料。
  • 2.将羊肉清洗干净泡水6小时,期间要换水几次。切块备用。
  • 3.将羊肉放入锅中翻炒,炒干水分。
  • 4.锅中加入热水大火煮开,打干净浮沫。加葱、姜、花椒、小茴香、料酒转小火慢炖1小时。肉烂时加盐。
  • 5.巴沙鱼去皮。
  • 6.将鱼肉剁成鱼茸。
  • 7.鱼茸中加入蛋清、盐、生姜水充分搅打上劲。
  • 8.搅打至可以插上筷子不倒就可以了。
  • 9.用手挤成丸子状。
  • 10.用汤勺将丸子接放在锅中。
  • 11.锅中放入葱段、姜片、料酒将丸子温水下锅。
  • 12.煮开鱼丸捞出备用。
  • 13.另起锅将炖好的羊肉带汤放入。
  • 14.放上鱼丸一起煮开,加胡椒粉小火煮10分钟。
  • 15.另起锅加水、盐焯熟萝卜片。
  • 16.将焯熟的萝卜片放入砂锅垫底。
  • 17.将鱼丸、羊肉带汤一起装入砂锅中,撒上青蒜即可。
