广式豆沙蛋黄月饼(50g模)
往年都是买月饼寄给爸妈,今年有了烤箱,想亲手做给爸妈尝尝。市场上的月饼不说油糖多,就是防腐剂多的吓人!据说有的月饼放了n多年,仍好好的,吓!**还是自己动手制作吧,健康,干净!其实也不难的。

  • 咸蛋黄10个
  • 糖化浆75克
  • 枧水1克
  • 玉米油25克
  • 低粉100克
  • 奶粉5克
  • 蛋黄1个

Steps to make 广式豆沙蛋黄月饼(50g模)

  • 1.称好糖化浆、枧水(食用碱+水1:3的比例)、玉米油(可用其它食用油、奶粉)
  • 2.糖化浆中加枧,食用油分次加入并搅拌均匀
  • 3.加入低粉和奶粉
  • 4.搅拌抱团,切勿过度搅拌,盖保鲜膜入冰箱闲置2小时左右
  • 5.咸蛋黄我是提前一个晚上做的,烤箱180度5分钟,看到蛋黄微微出油就可以
  • 6.冷却后浸油,油必须盖过蛋黄
  • 7.要做月饼时擦干油备用
  • 8.准备豆沙,我是自己做的,亲们也可以买现成的
  • 9.称重,我第一次做的时候是5个咸蛋,5个纯豆沙,所以豆沙团有大小,纯豆沙30g,加蛋黄的15g,每个蛋黄差不多15g,月饼皮20g就刚好做50g的月饼(食材中150g豆沙是10个蛋黄豆沙月饼的,亲们可以换成其它馅,只要皮20g,馅30克就可以了)
  • 10.豆沙压扁包住蛋黄,一手用虎口或手心拿蛋黄馅,另一只手帮助包馅,我是慢慢转化,往上包
  • 11.包好的豆沙蛋黄馅
  • 12.称好月饼皮:20g
  • 13.月饼皮压扁包馅
