酸辣豆芽扯面-----------适合夏天的开胃面
这道扯面是儿子百吃不厌的,只要我有时间问儿子吃什么,他总是一如既往的回答扯面,天气比较炎热,扯面的浇头里放了点豆芽,特别的清新爽口,还带有一点点辣辣的,是非常适合夏天的开胃面。

Steps to make 酸辣豆芽扯面-----------适合夏天的开胃面

  • 1.面粉里放入2克盐,水,揉成一个团。不必揉成光滑,静置10分钟(此时不要拼命地去揉,静置一会很容易揉光的)静置10分钟后,再来揉几下,瞧瞧现在的面团比前面的光了不少,盖上保鲜膜,让面团醒30分钟。
  • 2.将面团倒在案上直接搓成长条,不要去揉,分成若干小剂子。
  • 3.每一份搓成条,抺上油,盖上保鲜膜,静置1小时左右。
  • 4.趁着这个时间,正好做面浇头,土豆,洋葱切丁,豆芽洗净(肉末里放入盐,葱,姜,料酒搅拌均匀。
  • 5.锅中放入食用油,放入肉末煸炒,煸炒至肉末变色取出备用。
  • 6.豆芽放入水中焯一下。
  • 7.锅中放入食用油,放入洋葱煸炒。
  • 8.煸炒至洋葱出香味,放入土豆煸炒。
  • 9.放入煸炒好的肉末。
  • 10.放入豆芽,翻拌均匀,放入盐,蒜蓉酱,郫县豆瓣酱,酸辣番茄酱,鸡精翻拌均匀。
  • 11.放入适量水。
  • 12.煮3-4分钟,汤汁即将收干即可。
  • 13.取一份擀开,并用擀面杖在中间用力压一下。
  • 14.捏着两头,慢慢地拉抻长,可以在桌子上轻轻地甩打两下(如感觉有些厚薄不均,可用手从头到尾撸几下。
  • 15.可以一头扯断,一头连着,面条就会变得很长,下好的面捞出,放入面浇头,翻拌均匀即可。
