【山西】山西炒面皮
炒面皮是我们山西太原的当地特色小吃,夏天以凉拌为主,冬天冷了就改为小炒。虽说是街边小吃,但特别受欢迎,一年四季都有人爱吃。
如果说在当地人眼中,这小炒在过年过节时上不了台面,可对于外地人来说,还真是适合尝鲜的特色美食。
炒面皮也是从小吃到大的,这与之相配的豆芽和面筋绝对不能替换,但是外面的小店一般炒的汤水很多,我则不喜欢,自己改良下干香多了。

  • 4.加入面筋。
  • 5.翻炒后加入面皮。
  • 6.放入盐、生抽调味即可。
