Steps to make 杭椒小炒牛肉

  • 1.牛肉切成薄片,用铁锤拍打松散;
  • 2.在牛肉表面先横向切, 再竖向切成花刀;
  • 3..最后切成同样宽度的段;
  • 4.在牛肉中放入半个蛋清、盐、淀粉,抓匀腌制;
  • 5.最后再加入少量的油抓匀;
  • 6.油锅烧热, 下入牛肉丝滑炒;
  • 7.牛肉丝变色后捞出控油;
  • 8.锅中放入少许油, 下入杭椒和蒜片煸炒;
  • 9.杭椒微微变软后加入盐等调味料煸炒;
  • 10.再加入牛肉丝一起翻炒;
  • 11.加入适量的蚝油和生抽一起翻炒;
  • 12.出锅前加入小米椒段;
  • 13.翻炒均匀后装入碗中。
