山西发面油旋
发面油旋是山西的一道传统面食,因制作过程中有油,又是发面,而且还有一定量的盐,因此可以存放很久。据说过去在山西,家家女人都会做,男人多外出经商,家中的女人就会制做一些发面油旋,给男人当干粮。

  • 酵母2克
  • 泡打粉1克
  • 温水120克
  • 面粉25克
  • 色拉油15克

Steps to make 山西发面油旋

  • 1.面粉与泡打粉倒入面盆拌匀;
  • 2.酵母用温水化开;
  • 3.剩余的温水里加一勺油,调匀;
  • 4.将酵母水倒入面盆中与面粉拌匀,油水慢慢倒入面粉中和成面团,醒30分钟;
  • 5.花椒和小茴香入锅炒香;
  • 6.用料理机磨成粉;
  • 7.制作油酥,面粉中倒入凉油充分搅拌均匀;
  • 8.然后倒入花椒茴香粉拌匀;
  • 9.面板上刷一层油,将醒好的面团擀成约1厘米厚的面皮;
  • 10.倒上油酥抹匀,撒一层盐;
  • 11.卷起,收口捏紧;
  • 12.压扁,切成小条;
  • 13.每3小条摞一起拧成麻花,竖起压扁;
  • 14.擀成圆饼;
  • 15.入电饼铛煎至两面金黄,即可食用。
