排叉是老北京著名小吃,口感酥脆,添加了黑芝麻的排叉味道更香浓。

Steps to make 【北京】香酥排叉

  • 1.面粉倒入盘里,加一小勺精盐。黑芝麻加进去,我用的熟黑芝麻。
  • 2.凉水加进去,水千万不能多,因为这个排叉的面一定要和的很硬才行。
  • 3. 先用筷子稍微搅拌。
  • 4.用手慢慢揉成很硬的面团,如果软加面进去。盖上保鲜膜或湿布醒面半小时。
  • 5. 醒好的面擀成越薄越好的面片,一定要薄炸完才脆。如果面团大可以分两次擀开。
  • 6.断成相同大小的长方形小块儿。两小块儿叠在一起。
  • 7.中间划开三刀,两头不要划断。
  • 8.一头翻上来,从中间一刀里穿过去形成两条连着的麻花。
  • 9.油烧到6,7成热时做好的排叉下锅。
  • 10.转小火炸。
  • 11.两面深黄色捞出吸油纸吸油。
  • 12.又香又脆
