草莓奶油蛋糕

Steps to make 草莓奶油蛋糕

  • 1.将烤好的戚风蛋糕,倒扣放凉,脱模后,放入冰箱冷藏几小时,比较好切割
  • 2.用两个蛋糕分片器,夹住一把长锯尺刀,放在平滑的地方,拿住刀柄平移锯过去
  • 3.锯到蛋糕片最右侧的时候,可以用手扶住,保持蛋糕的平稳,一个6寸戚风,分割成三片
  • 4.称量淡奶油,我图中的奶油量太少,在抹侧面时,已经完全不够了,预计300克左右才差不多
  • 5.我按照淡奶油量的10%左右加砂糖,100克淡奶油加10克糖,按照这个比例,根据淡奶油量加砂糖,这个比较已经比较甜了。
  • 6.倒入少许朗姆酒,如果是给小孩吃的,完全可以不放。我倒了这个小瓶子的盖子两瓶盖的量
  • 7.打发成拉起有软软的小角,就差不多了。我基本开始用中速开发,打到浓稠的不流动时,转低速小心打发,打一两圈就马上停下来蓝风车的打发后,体积膨胀不大
  • 8.用抹刀刮取打发的淡奶油,倒到一片戚风蛋糕片上
  • 9.用抹刀推开抹平,依次把三片蛋糕片放好,抹蛋糕表面因为一个人操作忙不过来,无法对抹面过程拍照,抱歉
  • 10.用中号的三能五齿裱花嘴
  • 11.装入淡奶油,装饰蛋糕底部和表面侧边
  • 12.50克巧克力放入无油无水的容器内,隔热水加热直到融化,倒入20克水怡,搅拌均匀,倒入保鲜袋密卦好,放阴凉处一晚上
  • 13.第二天,先用手捍软,再捍成巧克力玫瑰花两手操作,手上沾的巧克力,无法拍照,抱歉有机会一定要补上捍花的过程
