Steps to make 红糖发糕(君之配方)

  • 1.准备材料。
  • 2.红糖40g+温水110g,干酵母3g+温水40g,分两个碗拌匀。
  • 3.120g中筋粉+60g玉米淀粉混合,再倒入酵母水及红糖水。
  • 4.面糊搅拌均匀,一定要呈带状滴落(这一步很关键,面粉之间会有差异,太干或太稀都会影响发酵,如果太干,可略加水调节。)。
  • 5.将面糊倒入可脱底的容器中,摆上切碎的枣肉。
  • 6.蒸锅内水烧至发烫,关火,放入面糊,盖上盖子,发酵20-30分钟,待面糊体积增大至原来的两倍。
  • 7.接着用大火蒸20分钟左右,即可。
  • 8.发糕松软,红糖跟红枣,味道很搭哦。
