肥而不腻的毛氏红烧肉
毛氏红烧肉是采用半瘦半肥的猪肉,切成匀称的切状,再用上等酱油加少量的糖烧制而成,色泽呈金黄,味道糖而不腻。当年***是最喜欢吃这道菜的,遍布全国各大城市的毛家餐馆都用红烧肉来作招牌菜,故美其名曰“毛氏红烧肉”。正宗的毛氏红烧肉是不添加酱油的,因为毛主席在生活中不吃酱油,毛主席在小的时候父亲开了一个制作酱油的作坊,在当时各方面条件很差,他亲眼目睹了制作酱油的过程,产生了一些反应,以后就不吃酱油了。毛氏红烧肉的色泽全是靠糖色烧至出来的,此菜的特点;肥而不腻,咸鲜辣香,色泽红亮。

  • 1.五花肉洗净,切成2.5厘米见方。
  • 2.锅中放水,下入切好的五花肉。
  • 3.把五花肉焯水后捞出控干水分。
  • 4.准备好葱姜蒜 八角 桂皮 干辣椒。
  • 5.锅中放入少许的油炒香葱姜蒜 八角 桂皮 辣椒。
  • 6.下入焯水的五花肉煸炒至表面微黄后盛出。
  • 7.另起锅,锅内放少许油,加糖炒至棕红色。
  • 8.下入煸好的五花肉翻炒。
  • 9.小火翻炒至五花肉都均匀的裹上糖色。
  • 10.倒入黄酒和少量的开水,转小火焖至1小时,加入盐收干汤汁即可。
