    Steps to make 酱腌小黄瓜

    • 1.将黄瓜洗净,晾干(不要带水)。
    • 2.黄瓜从中间切开(如果是大黄瓜,可以切成细条)。
    • 3.切好后,黄瓜上面撒盐并拌匀(黄瓜和盐的比例为500克黄瓜用50克盐)。
    • 4.然后用重物压在黄瓜上面, 中间翻动一下,大约腌一天时间。
    • 5.准备辣椒、姜、蒜瓣。
    • 6.辣椒切段、姜切片、蒜中间切开。(注意也要晾干再切)
    • 7.准备酱油(500克黄瓜用150克)、白糖(500克黄瓜用50克糖),放入锅中煮开,白糖化后关火晾凉。
    • 8.晾凉的酱汤放入大碗中。
    • 9.在酱汤中加入黄瓜、姜、蒜、辣椒拌匀,再加少量白酒、味精。
    • 10.锅中倒油,热后加花椒少许炝一下锅,关火。
    • 11.待油温稍凉后浇到黄瓜上,腌一天就可以吃了。
