Steps to make 梅菜扣肉

  • 1.梅干菜60g冲洗一下,加水泡软。
  • 2.将泡好的梅菜干挤水,姜片、青红辣椒切末。
  • 3.炒锅放入较多的油,炸香几粒花椒后,捞出花椒。
  • 4.下入青红辣椒,姜末。
  • 5.加入梅干菜翻炒均匀。
  • 6.调入适量的白糖和盐(添加多少依个人口味)。
  • 7.翻炒入味后出锅。
  • 8.碗中加入生抽、酱油、料酒、白胡椒粉、擦些姜蓉,盐糖适量。
  • 9.准备好的烧肉切厚片。
  • 10.将肉皮朝下,肉片错落开码入碗中。此时也可浇入料汁腌渍最好。
  • 11.肉片上放炒好的梅干菜。
  • 12.将配好的料汁均匀的浇入碗中。
  • 13.放入蒸锅中,水开后大火蒸一小时。
  • 14.在蒸肉晚上扣一盘,,快速翻转过来,即可上桌。
  • 15.也可将汤汁滗出加热勾点淀粉做个薄芡淋上肉上。
