【蓝莓乳酪全麦包】

  • 奶油奶酪(馅料)100g
  • 自制果酱(馅料)30g
  • 黑糖30g
  • 3g
  • 清水130~140g
  • 速发干酵母3g
  • 无盐黄油15g

Steps to make 【蓝莓乳酪全麦包】

  • 1.将100g面粉、100g清水与1g酵母混合均匀,发酵至回落状态,即为老面;
  • 2.混合老面、除了黄油与馅料之外的其他材料。酵母可以提前与剩下的清水混合之后再加入粉类混合物中;
  • 3. 用刮刀将2中的材料混合至基本成团;
  • 4. 转移到硅胶垫或者案板上,揉到光滑后,加入黄油,继续揉至扩展状态,即能够拉出较厚的薄膜;
  • 5.将面团放入容器中,盖上保鲜膜,放在温暖处,进行基础发酵;
  • 6.大约1小时后,面团发酵至原体积的2倍大小。用手指沾干粉,戳洞不回缩不塌陷,基础发酵结束;
  • 7. 等待发酵的过程中,将奶油奶酪打发至顺滑,加入果酱搅拌均匀,盖上保鲜膜备用;
  • 8.基础发酵完成后,将面团取出,排气;
  • 9.根据自己喜欢,分割成大小均匀的小团,滚圆,盖上保鲜膜,松弛20分钟;
  • 10.取一个松弛好的小面团,擀开成长方形,在中间抹上馅料,然后放上蓝莓。注意面团不要擀的太薄;
  • 11.将面团卷起,捏紧收口;
  • 12.收口向下,放在已经垫好油纸的烤盘中,放在温暖湿润处进行二次发酵;
  • 13.二次发酵结束后,在面团表面刷一层蜂蜜水(或者清水),然后撒上些麦片,芝麻等等做为装饰(也可以不撒);
  • 14.烤箱提前预热180度,预热结束后,将烤盘送入烤箱,中层上下火175度,烘烤20分钟左右(根据面团大小自行调整)。烘烤结束后,立即出炉,转移到晾网上,凉至室温不烫手,密封保存。
